Summer is at its peak in my part of the world and I don’t find a better idea other than ice cream to beat the heat!!! Last night it was so humid that I had to pour some water on me at around 2 AM to get some sleep!! #truestory! Stepping out during the daytime is even worse!!
Coming back to the homemade vanilla ice cream, its a super simple and basic ice cream recipe with just four ingredients. My Amma got it from my sister-in-law and then was shared with me. (Check out her food blog here.) It’s one of the easiest recipes. Being a mom means finding the easiest recipes, right? And being an ardent lover of homemade food/sweets/cakes, I just went ahead and made this very basic yet yummy ice cream. My toddler girl loved it, just like everyone else at home. Milk – 1/2 litre
Maida / All Purpose Flour – 2 teaspoons
Butter – 2 tablespoons
Sugar – 1/2 – 3/4 cup
Vanilla Essence – 1 teaspoon
Keep half cup milk aside. Boil rest of the milk with enough sugar. Make sure you adjust the sugar according to your taste. Do not switch off the flame, keep it on low heat.
Take out the half cup milk that was kept aside and add maida to it. Stir well, until both combine well. Add this mixture to the boiled milk. Let it boil again and then switch off the flame.
Add butter at this moment, stir well and then add vanilla essence. Let this sit for an hour and cool completely.
Once it cools down, transfer it to an air-tight container and keep it in the refrigerator for about an hour, to chill. Take it out and beat well with an electric beater; you can even use a blender. Keep it back in the air-tight container and place it in the freezer for about 4-5 hours. And voila, the soft and creamy vanilla ice cream is ready.
