I have never tried a mushroom dish while I was in Kerala. It was during our UK days that I first tried this dish (this is the only mushroom dish I have tried so far). So here comes the step by step recipe of Mushroom Masala.
Mushroom – 1/2 kg, cleaned and sliced
Shallots – 3, crushed
Garlic – 5, crushed
Onion – 1/2, finely chopped
Green Chilli – 2 or 3, slit
Curry Leaves – 2 sprigs
Turmeric Powder – 1/4 tbsp
Chilli Powder – 1/2 tsp
Coriander Powder – 1/4 tbsp
Garam Masala – 1/4 tbsp
Pepper Powder – 1/2 tsp
Salt as required
- Heat oil in a pan, add crushed shallots and garlic, onion, green chilli and curry leaves, saute well. Don’t let the onions turn brown.
- Add in the masala powders (turmeric powder, coriander powder, chilli powder and pepper powder).
- Now add the sliced mushrooms and salt and saute for 2 mins and cover and cook for few mins until mushroom starts to release water. Do not overcook, as mushrooms tend to become soggy very fast.
- Add garam masala at the end, mix everything well and serve hot with rice or roti.
